I don't know about you guys, but I have a TON of kale coming out of my garden right now! Aside from braising, massaging and smoothie-ing kale, I love to incorporate it into homemade sauces like pesto! This recipe is a template, so please tweak flavors to your liking!
1 bunch of cilantro or parsley
2 cups de-stemmed kale (any variety)
½ cup walnuts or pepitas
4-6 cloves garlic
¼ cup extra virgin olive oil
salt and pepper to taste
Place first four ingredients in food processor and pulse. Slowly drizzle in olive oil and season with salt and pepper. This should form a think pesto paste that will keep in the fridge for several weeks. Thin it out with a little more oil and/or vinegar to dress a salad or keep it thick and spread over anything from salmon to corn on the cob to crusty bread!
